I was feeling a little domesticated today and thought what better than to make some special homemade dinner rolls for my honey. He loves bread with dinner, so this was sure to be a hit. Just look at all of those yummy dinner rolls.

Recipe: Parker House Rolls (for Sunday dinner)
Summary: A basket of made-by-you rolls with golden-brown crusts, hot buttery centers – just watch them disappear at Sunday dinner.
Ingredients
- 1 package active dry or 1 cake compressed yeast
- ¼ cup water
- 1 cup milk, scalded
- 2 tablespoons shortening
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 well-beaten egg
- 3½ cups sifted enriched flour
Instructions
- Soften active dry yeast is warm water (110º) or compressed yeast in lukewarm water (85º). Set aside.
- Combine milk, shortening, sugar, & salt; cool to lukewarm.
- Add yeast & egg.
- Gradually stir in flour to form soft dough.
- Beat vigorously.
- Cover & let rise in warm place (82º) till double.
- Turn out on lightly floured surface.
- Roll or pat on lightly floured surface till ¼ to ½ inch think.
- Cut with 2½-inch biscuit cutter.
- Brush each of the rounds with very soft butter.
- Make a crease (just off center) with back of knife.
- Fold so top overlaps slightly. Seal end edges.
- Place on greased cookie sheet.
- Brush with melted fat (or butter).
- Let rolls rise till double.
- Bake in hot oven (400º) about 15 minutes.
Quick Notes
Makes about 3 dozen small rolls (I yielded 25). Serve hot-as-the-oven in a napkin-lined basket.

@Kathy, That does sound really good, Kathy. I will have to make some with my next chicken dinner.
I think he wishes I would cook from scratch all of the time, but most things are fairly homemade. Yet, there is something so great about mixing and kneading and preparing much as they did years ago.
