This is what happens when I get restless from being indoors too many days in a row.
Homemade Egg Noodles
This was super easy to make and took surprisingly very little time. I must confess I used my KitchenAid Mixer to mix and then knead the dough, but I rolled out and cut the noodles by hand. And it was so cool, too. They look, feel, and taste like noodles!
Since this particular recipe isn’t listed online I’m going to omit the specific ingredients [don't want to infringe on any copyrights]. I did want you to know how simple this really was, but still very exciting all the same so I will tell you how I did it.
Directions
Mix flour, dried herbs, and salt. Make a well and add eggs, water, and oil. Mix until well blended. If too dry add a water drop by drop. If too sticky add a little flour until pliable. Knead for approximately 5 minutes.
Separate dough into 4 equal parts. Cover 3 parts and set to the side. On a heavily floured surface roll out dough until approximately 1/16″ thick. [Note: I realized the noodles will expand some when cooking so make sure noodle thickness allows for this expansion.] I used a marble rolling pin to roll out the noodles.
Lightly fold dough in thirds. Cut the dough in 1/4″ strips. I used my kitchen shears and this worked out really well. Unfold the dough.
Bring 4 quarts water to boil. Once boiling add noodles and cook 3 – 5 minutes or until tender. Drain and rinse with cold water. Enjoy!

This recipe was found in my Betty Crocker Cookbook. I desperately need a new one as mine is well loved and falling apart. But what better book is there for finding basic directions for cooking chicken, beef, pork, fish, homemade egg noodles!

I soooooo want my wife to make some homeade noodles, I grew up in a heavy Italian household and my Mom always made fresh noodles. So awesome!

@Extreme John, I told my husband that if I don’t find a job soon we’re going to have to start growing wheat and I’m going to have to learn how to make my own flour, too. Sad thing is he knew I was only half joking.
Next up, spaghetti noodles. Guess I’ll have to invest in some sort of gadget for that.

@Aswani, Sometimes I really love cooking and other times it can be a real chore. I have been wanting to make homemade noodles for some time now and finally just did it. I would say if you want to learn to cook then find something simple that you really like and start from there. Let me know if I can be of any help.

Well, since you mention it, I’m a pretty good pastry chef, which I say humbly. I’m off pastry for Lent, of course. now let me just say this right off the bat, I suck at puff pastry of all kinds, but my forte is pie crust. Why, Anne, some people like my pie better ‘n they do mah singin’!
but enough of that.
I’ll never forget my adventure in beef stew. Turnips are not a good addition to it.
But enough of that too!
Those are some freaking good looking noodles made by your own Kitchen Aide and hand. i bet you will be planting your own wheat and making your own flour, and I’m not just saying this as grist for the blogging mill comment conversation, to pun.
Oh, I know a pancake is a humble thing, but I do fancy myself an expert flapjacker. Mix minimally and allow the batter to stand covered an hour before cooking – oh yeah!

@Jannie Funster, Oooo, I hear Heather is partial to pie. But she is in hiding and may never see that you are such a pie crustier extraordinaire!

I may just plant my own wheat and grind it myself. Sounds like an adventure for sure! If we get a good batch of tomatoes I’m going to can some homemade spaghetti and tomato sauces [for pizzas and such as well]. I may just become a Suzy Homemaker after all. Wow!
I’m going to try the pancake thing. We usually cook it immediately. I’ll give you credit for the yummy goodness, I promise!

@Rose, I was so excited with these. The first batch I fed to the chickens as they were a bit plump. Rolling them thin is definitely key here. Next up, spaghetti and macaroni. I need a noodle maker for that, though.

@Kaja, We go through a lot of noodles around here, so I am seriously considering making homemade a bit more often. If nothing else, it’s great to know for those times you need some and don’t have any or need more than you already have.

Hi!

I was curious…Do homemade noodles taste just like boxed noodles OR are they EXCEPTIONALLY better? I have 4 little girls and we eat A LOT of pasta here- lasagna, spaghetti, etc… So I was wanting to see if I could give it a lil PIZAZZ with homemade noodle… Please lemme know!

@Catrina, Hi Catrina, To me the homemade noodles tasted similar to the egg noodles you would buy, but fresher. What you could do to jazz them up would be to experiment with herbs and vegetable juice to add color and flavor. There are lots of recipes online for different types of noodles as well. Also remember to make them as thin as possible since they will swell once they hit the water. I just used a rolling pin, but you could buy an inexpensive noodle extractor.
The best part of homemade noodles is you know exactly what is in them (none of those ingredients you can’t pronounce just to preserve them on the shelf for years). And you could get your daughters involved in the making process.

I have the KitchenAid fettuccine and spaghetti attachments, along with the basic sheet pasta roller. If you let the sheets dry for about ten minutes or so and dust them lightly with flour you can roll them through the cutters so easily it’s almost not funny. Tonight a friend brought us a pound of fresh chanterelle mushrooms. While chicken chunks and chanterelles were cooking I pushed out a batch of fettuccine for five people in under an hour, and then made a quick white sauce while the water heated up.
I bet you would love the pasta attachments. If you can, connive a relative or two to chip in to buy them for you for Christmas, if you celebrate Christmas. Mine have almost paid themselves off!
