The holidays are upon us and it is time to cook, bake, reheat, refresh, and reuse. That is right, reuse! Personally, I like to keep things simple. After Thanksgiving my favorite leftover is open-face turkey sandwiches with gravy. [Mmm] Then, after Christmas it is chopped ham with small noodles (flakes if you can find them) with gravy. There is a Czech name for this dish, but I do not know how to spell it. And yes, I love me some gravy!
Need some help coming up with ideas for your leftovers? Some of these recipes also mimic your favorite restaurant dishes. Now wouldn’t that be a treat?! Oh, and did I mention they are free?

Leftover roasted chicken…
I like to add this to pasta, Alfredo sauce, homemade pesto (is there anything better?), and diced tomatoes.
or
Make chicken and dumplings, which goes very well with the leftover carrots and potatoes.

Your mom made chicken dumplings once when I was over. I remember sitting in the kitchen talking to her, but I don’t remember the food other than that was what she was making and I had never had it before [or since].
I’ve never had pesto. I like to add leftover roasted chicken to a nice stir fry. It gives it a nice flavor and you don’t have to worry about it being undercooked.
