Shrimp with Confetti Rice Packets

Not sure what it is, but lately I have been trying to expand my menu.  DH loves this as he gets tired of the same old same old and tonight was even more special as we hardly ever eat seafood!

Reynolds Wrap Packet Cooking

I won this neat little recipe book from Kroger’s Daytona 500 game (my second win from this promotion) and thought I would see what looked good.  There are several recipes I would love to try, but I decided to go with the shrimp tonight since I had some in the freezer and it is definitely a break from the norm.

Ingredients:

  • 1 pound peeled & deveined medium uncooked shrimp (I used cooked)
  • 1 1/2 cups instant rice (I used brown)
  • 3/4 cup water
  • 1/2 cup shredded carrots
  • 1/3 cup teriyaki marinade & sauce
  • 1/4 cup sliced green onions
  • 2 teaspoons sesame oil
  • 1/2 teaspoon garlic powder
  • 2 tablespoons sliced almonds (optional)

Also needed: 4 sheets (12×18-inches each) Reynolds Wrap Heavy Duty Foil

PREHEAT grill to medium-high or oven to 450ºF. Combine shrimp, rice, water, carrots, teriyaki marinade & sauce, green onions, sesame oil, and garlic powder in a large bowl.

CENTER one-fourth of shrimp mixture on each sheet of Reynolds Wrap Heavy Duty Foil.

BRING up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.

GRILL 6 to 8 minutes in covered grill OR BAKE 15 to 18 minutes on a cookie sheet in oven. Sprinkle with almonds and additional teriyaki marinade & sauce before serving, if desired.

This was rather good.  To me it tasted just like teriyaki shrimp the restaurant’s serve, but for a fraction of the cost.  I did not add the almonds or additional sauce after cooking.  It was a little bit salty, so I would not recommend adding more sauce.  Also, we used our grill and saved our house from the heat of the oven.  This was simple to make and something we will have again.
