Harvest Turkey Pot Pie

Pillsbury Pot Pies

I received this amazing little recipe book in the mail courtesy of MyBlogSpark and Pillsbury and just had to find something new to try.  I am a VERY picky eater, but there are several recipes that have caught my eye.  I decided to try the Harvest Turkey Pot Pie with modification.

Ingredients:Turkey Pot Pie

  • 1 cup uncooked instant brown rice
  • 1 tablespoon olive or vegetable oil
  • 2 medium stalks celery, sliced (about 1 cup)
  • 1 large onion, chopped (about 1 1/2 cups)
  • 1 large apple, chopped (about 1 1/2 cups)*
  • 3 cups cut-up cooked turkey
  • 1 jar (12 oz) turkey gravy**
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried sage leaves
  • 1 Pillsbury refrigerated pie crust (from 15-oz box), softened as directed on box
  • 1 can (16 oz) whole berry cranberry sauce

*I omitted the apple and used 1 package of frozen peas
**I used powdered chicken gravy mix

1 – Heat oven to 400ºF. Spray 2-quart round casserole with cooking spray. Cook rice as directed on package. Spread rice in bottom and 1 inch up side of casserole.

2 – In 12-inch nonstick skillet, heat oil over medium-high heat. Add celery and onion; cook and stir 5 minutes. Stir in apple; cook and stir 3 minutes. Stir in turkey, gravy, salt and sage. Cook and stir about 3 minutes or until thoroughly heated. Spoon turkey mixture over rice in casserole.

3 – Unroll pie crust over hot turkey mixture. Fold excess crust under and press to form thick crust edge; flute. Cut slits in several places in crust.

4 – Bake about 25 minutes or until crust is golden and filling is bubbly. Serve with cranberry sauce.

This says it serves 5, but we fed 6, plus had enough for at least 2 more people.  We stretched this by making mashed potatoes and biscuits to compliment the meal.  I must say, I love honey butter and when I saw Pillsbury now makes a honey butter biscuit I had to get them.  They are so good there is no need to put anything on them.  Unless of course you want to use them to sop up your gravy, then that would be a-okay!

It definitely tastes better than it looks!  This was a winner in our house and something I plan to make again with all of those Thanksgiving leftovers.  I would think you could substitute chicken, beef, or pork for the turkey.  Next time I plan to try the Veggie Lover’s Pot Pie.
